Saltimbocca of lamb on asparagus ragout

Recipe for 4 people
Preparation time: 60 min
Lamb sirloin 8 slices
Bacon (Prosciutto crudo) 60 g in slices
White asparagus 250 g
Green asparagus 250 g
Veloutè (Veg-stock ligated with butter and flow) 100 g
Sage, pepper, oil, salt and flow
- Peel and cook the white and green asparagus.
- Cut the asparagus in cubes and put them into the veloutè.
- Heat up oil in a pan and fry the lamb sirloin after you put sage, bacon and flower on it.
- Heat up the veloutè with the asparagus and serve it on a plate and on it the lamb sirloin.
