Rye dumplings with cheese and herbs

Ingredients
Recipe for 4 people
Preparation time: 40 min

Flour 150 gr
Durmu wheat 150 gr
Eggs 3
Ricotta Vaccina 400 gr
Parmesan 100 gr
Thyme, marjoram, parsley, basil, chives
Morgen-Duft Apples 3
Sugar 150 gr
White wine ½ glass
Cinnamon ½ star
Salt and pepper

Preparation
for the mixture: unite the 2 flours, add the eggs and knead tough. Let rest in the fridge for 1 hour.
The filling: sift the ricotta and add the cheese, the herbs, salt, pepper and amalgamate everything until you get a homogeneous mass.
Caramelized apples: put the sugar in a sauce pan over a medium heat. Leave it until the sugar crystals have all transrformed into a liquid. Then add cinnamon and the peeled and slieced apples. Wet all in white wine and bake it for 5 minutes.
