Mascarpone cream with berry fruits, honey and pistachios

Ingredients
Mascarpone cheese 500 g
Egg yolk 4 pc
Sugar 80 g
Honey 20 g
Water 50 g
Berry fruits 400 g
Pistachios
Mint 1 branch
Preparation
In a small pot heat up to 120 °C the water, sugar and honey. Let the syrup cool.

Whisk the egg yolk and mix it with the syrup. Fold carefully with the mascarpone cheese.

Pour alternating layers of mascarpone cream and berry fruits and then garnish with the remaining berry fruits, the pistachios and a mint leaf.
