South Tyrolean Muas

The typical Tyrolean farmer's dish: a sort of porridge made of milk, flour and butter

For 4 people

1.5 l whole milk
0.5 l water
200 g "muas" flour (wheat semolina)
1 pinch of salt
70 g butter
Preparation
Bring the milk, water and salt to the boil in a cast-iron skillet. Whisk in the muas flour and continue to stir gradually until it has a creamy consistency.
Then cook the pan over a gentle heat without stirring until it "sticks" slightly to the bottom.
Brown the butter in a small pan and pour the butter over over the "Muas".

TIP: If you like, you can sprinkle the muas with cinnamon and sugar.
