Ingredients
For 4 people

470 g flour 00
30 g rye flour
10 g butter
10 g sugar
12 g salt
130 g milk
160 g water
0,5 g fresh yeast
Preparation
Dissolve the yeast in the water and milk, then mix all the ingredients together and knead into a smooth dough.
Cover and leave to rest in a bowl for about 20-24 hours. Then cut the dough into 9 pieces, bring to tension and form into balls.
Leave to rest for half an hour, then form the rolls. Cover with a kitchen towel and let rest again for about 1 hour.
Preheat the oven to 230° and bake the rolls for about 20 minutes until golden brown.
