Nettle Dumplings

  • 300 g dumpling bread cube
  • 4 eggs
  • 150 g nettles (or more, if desired)
  • 200 - 250 ml milk
  • 1 - 2 onions
  • 2 garlic cloves
  • 2 tbsp grated Parmesan
  • 2 tbsp flour
  • 2 tbsp butter
  • chives and parsley, chopped
  • salt, pepper, nutmeg
Preparation
Briefly blanch the nettles and mix them with the eggs and part of the milk into the dumpling bread cubes. Sauté the chopped onions in butter, let them cool and add to the mixture. Add the chopped garlic, Parmesan, chives and parsley and mix well. Let the dough rest for 15 minutes. Use the remaining milk as needed. Finally, sprinkle the flour on top. With wet hands, press the dough together several times (it should be neither too wet nor too dry) and shape into dumplings. Simmer gently in salted water for about 15-20 minutes.
