The milk used at the nearby Trentino dairies comes from the local dairy farms, where the TrentinGrana Italian-type hard cheese is produced. The hard, full-flavored cheese is similar in taste and texture to its more famous Italian relative, Parmesan.

The production of TrentinGrana is subject to extremely high quality controls and the dairy cows are fed high quality local hay and special cereals. Up to 900 liters of cow’s milk are needed to produce a 40 kg wheel of TrentinGrana.

Several cheese-making processes are still performed by hand at the Fondo and Castelfondo cooperative dairies utilizing natural cow's milk, salt and rennet. Vacuum-packed TrentinGrana cheese is long-lasting and makes a great souvenir of Alta Val di Non/Deutschnonsberg to take home after your holidays.
