Cantuccini (Italian Almond Cookies)

In combination with Vin Santo: the perfect Tuscan dessert combo and worth a sin!

For 8 people

140 g sugar
2 g baking powder
50 g butter (room temperature)
250 g wheat flour 00
4 eggs
1 egg yolk
1 pinch of salt
125 g almonds
Preparation
Roast the almonds in a pan and leave to cool. Then mix all the ingredients and knead into a smooth dough.
Cut 4 strands from the dough and roll into sausages. Place on a baking tray lined with baking paper and bake for 15 minutes at 200° hot air. Remove and cut into slices while still hot and leave to dry for a further 15 minutes at 120/130°.

TIP: Serve your Cantuccini with the famous Vin Santo ("holy wine" Italian dessert wine from Tuscany).
The best way to savour the Cantuccini is to dip the cantuccio into the dessert wine to exalt its flavour.
