A taste of South Tyrolean warmth at home🧡As the days grow colder, there’s nothing quite as comforting as a hot bowl of soup — especially an authentic South Tyrolean barley soup! 🏔️🍁Hearty, traditional and full of flavor, it’s a classic dish often enjoyed on a cozy autumn day. 🍂✨Recipe: South Tyrolean Barley Soup (Gerstsuppe / Graupensuppe)🌿🍳Serves 4Ingredients:🍂• 1.5 l water • 150 g smoked pork meat • 1 small piece of smoked belly bacon • 100 g rolled barley • 1 potato • 1 onion • 1 clove garlic • 1 carrot • A few celery greens (or a small piece of celery root) • Parsley • Salt and pepper Preparation:🍳Lightly roast the onion, garlic, celery greens and carrot in a pot. Rinse the barley briefly with cold water, then add it to the vegetables. Pour in the water and add the smoked meat and bacon. Let the soup simmer gently for about 45–50 minutes. ⏲️About 10 minutes before the end of cooking, add the peeled and chopped potato. Season with salt and pepper, then sprinkle with fresh parsley before serving. 🌿🍲💡 Tip:A smoked farmer’s sausage also tastes delicious in this soup!
