Colorful forests, snow-dusted mountain peaks, and clear, far-reaching views. Alongside these, regional delicacies and inviting events: this is autumn in the Merano region. It is considered the most beautiful time of the year. From the end of September to November, the traditional Törggelen should not be missed.

Törggelen in Marling: A Tradition of Enjoyment

Törggelen is a centuries-old tradition deeply rooted in the culture of South Tyrol. Especially in Marling, the rural village above Merano, Törggelen holds a special significance. Originally emerging as a celebration of the grape harvest, Törggelen has evolved over time into a cozy autumn custom, where locals and guests gather to enjoy new wine, roasted chestnuts, and hearty South Tyrolean dishes.

The History of Törggelen

The roots of Törggelen go back to the Middle Ages, when winemakers, after the grape harvest, invited friends and neighbors to a celebration in their cellars. The name "Törggelen" derives from "Torggl," the old word for a wine press. In Marling, this tradition is proudly preserved, and many farms and taverns open their doors to offer the new wine, also known as "Nuier," along with regional specialties.

Marling and the Wine Culture

Marling has a special connection to wine culture. This is evident not only through Törggelen but also through the well-known Wine Culture Path, which winds through the picturesque vineyards of the village. Along this path, visitors can discover the variety of South Tyrolean wines, learn about the history of winemaking in the region, and enjoy breathtaking views of the surrounding landscape. This varied farm hike combines nature, local flavours and beautiful panoramic views around Marling. ✨

Starting along the Marling Waalweg trail, the route passes the inn Haidenhof, the historic Tauferer Badl and continues uphill to the Hoferhof inn and the Kurzhof farm. Along the way, stunning views over the Adige Valley and peaceful paths through nature await. 🌲☀️

Ob nach einer gemütlichen Wanderung, einem langen Ausflugstag oder einfach zwischendurch – auf eines freut man sich doch immer: auf ein richtig gutes Essen. 😍🥾🍽️

Und was gehört in Südtirol einfach dazu? Natürlich traditionelle Knödel! 🌿Kaum ein Gericht steht so sehr für Südtiroler Genuss und echte Hausmannskost wie sie – ganz egal ob Speck-, Käse-, Spinat- oder Gemüseknödel. 🤎

Heute verrät euch unsere Bäuerin Elisabeth ihr leckeres Rezept für bunte Gemüseknödel zum Nachkochen. 👩‍🍳Da bekommt man direkt Hunger, oder? 😋

🥣 Rezept für ca. 10–15 bunte Gemüseknödel

🛒 Zutaten:
• 500 g Dinkel-Knödelbrot
• 400 g Gemüse nach Wunsch (z. B. Karotten, Zucchini, Auberginen, Paprika usw.)
• ½ Lauchstange
• 1 Knoblauchzehe
• 4 Eier (Größe M)
• 2–4 EL Dinkelvollkornmehl
• Kräutersalz & Pfeffer
• Bei Bedarf Brotbrösel

👩‍🍳 Zubereitung:
Das Gemüse und den Lauch waschen, klein schneiden und gemeinsam mit dem Knoblauch dämpfen. Sobald das Gemüse weich ist, etwas abkühlen lassen.

Die Eier in einer großen Schüssel aufschlagen, das Gemüse dazugeben und mit Kräutersalz und Pfeffer verrühren. Anschließend das Knödelbrot und das Mehl hinzufügen.

Ist der Teig zu nass, etwas Knödelbrot oder Brotbrösel dazugeben. Ist er zu trocken, mit etwas Wasser verdünnen.

Alles mit nassen Händen gut vermengen und Knödel in gewünschter Größe formen. Danach die Knödel ca. 12–15 Minuten in leicht köchelndem Salzwasser ziehen lassen. 😊

Delightful insights and authentic flavours from Marling🍇🍷

Last Wednesday, participants of the WineCulture Experiences visited Pardellerhof Winery. Together with Erwin and Anita, they explored the vineyards and the cellar and gained fascinating insights into their work and the winemaking process. 🚶🍇

Of course, indulgence was not forgotten: Characterful wines from Marling were accompanied by typical local specialties – from the “Marnea” cheese, fresh apples and homemade "Gugelhupf" cake to aromatic liqueurs. 🥂🍎🧀
